Instructions
- 1. Preheat the oven to 350°F and prepare an 8x8 or 8-inch round cake pan with parchment paper or nonstick spray.
- 2. In a medium bowl, mix the almond flour, baking soda, pumpkin pie spice, and salt.
- 3. In a larger bowl, whisk together the eggs, pumpkin puree, melted coconut oil, maple syrup, and vanilla.
- 4. Combine the dry ingredients with the wet ingredients and stir until mixed.
- 5. Pour the batter into the prepared baking dish.
- 6. In a small bowl, mix the crumb topping ingredients until well combined and sprinkle over the batter.
- 7. Bake for 42-50 minutes, or until a toothpick comes out clean.
- 8. Allow the cake to cool for at least 30 minutes before serving. Optionally, sprinkle with powdered sugar.
