Instructions
- Preheat the oven to 325°F.
- Spray an 8x8 baking pan with cooking spray.
- In a bowl, mix together the butter, brown sugar, eggs, pumpkin puree, bananas, and vanilla until combined.
- Add salt, baking powder, baking soda, and mix well.
- Gradually add flour, mixing ½ cup at a time without overmixing.
- Stir in the cinnamon until just combined.
- For the topping, mix the butter, sugars, and cinnamon together.
- Pour the batter into the prepared pan and sprinkle the topping over it, swirling it slightly.
- Bake for 40-50 minutes until a toothpick comes out with a few crumbs.
- Allow the coffee cake to cool before cutting.
