Ingredients

The base

  • 1 cup chopped yellow onion
  • 3 cloves garlic, chopped
  • 1 cup chopped yellow bell pepper
  • 1 cup diced red bell pepper
  • 1 tablespoon oil for sautéing
  • 4 teaspoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper

The liquids and beans

  • 1 can fire roasted diced tomatoes (14.5 oz)
  • 1 can pumpkin purée (15 oz)
  • 2 cups vegetable broth
  • 1 can kidney beans (15 oz, drained and rinsed)
  • 1 can black beans (15 oz, drained and rinsed)
  • 1 tablespoon apple cider vinegar

Instructions

  1. Sauté the onion, garlic, and peppers in oil or broth until the onion is soft, about 5 minutes.
  2. Add the chili powder, cumin, smoked paprika, salt, and pepper, and sauté for about 1 minute.
  3. Stir in the tomatoes, pumpkin, broth, beans, and vinegar, then simmer uncovered for 20-25 minutes.
  4. Serve with toppings of choice.
