Slow Cooker Tortellini Sausage Potato Soup

Ingredients

The soup base

  • 1 pound peeled, chopped sweet potatoes
  • 1 pound peeled, chopped Yukon gold or yellow potatoes
  • 3 cups chicken broth
  • ½ tablespoon dried parsley
  • 2 cloves garlic, finely minced

The additions

  • ½ to 1 pound ground sausage, cooked and crumbled
  • 9 to 12 ounces package cheese tortellini
  • 2 cups half and half
  • 2 to 3 handfuls fresh spinach, torn into pieces
  • to taste salt and pepper

Instructions

  1. Add the potatoes, chicken broth, parsley, and garlic to the slow cooker.
  2. Cover and cook on low for 5-6 hours or high for 2-3 hours until the potatoes are tender.
  3. Lightly mash the potatoes in the slow cooker until slightly chunky.
  4. Stir in the cooked sausage, tortellini, half and half, and spinach.
  5. Cook on high for 20-30 minutes until the tortellini is tender.
  6. Season to taste with additional salt and pepper.
