Ingredients

  • 2 tablespoons butter
  • 1 chopped onion
  • 2 carrots peeled and chopped
  • 1 pound Italian sausage
  • 2 teaspoons minced garlic
  • 1 tablespoon chopped fresh thyme
  • ½ teaspoon sea salt
  • ½ teaspoon crushed red pepper
  • 6 cups chicken broth
  • 6 ounces cream cheese
  • 1 cup grated parmesan cheese
  • 16 ounces dried cheese tortellini
  • 4 cups chopped fresh spinach
  • 1 cup half and half

Instructions

  1. Melt the butter in the slow cooker using the sauté function or in a skillet on the stove.
  2. Add the onion and carrots, cooking for 5 minutes.
  3. Add the sausage, breaking it up, and cook until browned for another 5 minutes.
  4. Add garlic, thyme, salt, and red pepper, cooking for an additional 30 seconds.
  5. Transfer to a slow cooker if sautéing in a skillet, then add broth and cream cheese, covering and cooking on low for 4 hours.
  6. Stir in parmesan cheese until combined.
  7. Add tortellini, ensuring it is submerged, and cook for an additional hour on low.
  8. Press spinach into the liquid, cooking for another 10 minutes until wilted.
  9. Stir in half and half before serving.
