Instructions
- Melt the butter in the slow cooker using the sauté function or in a skillet on the stove.
- Add the onion and carrots, cooking for 5 minutes.
- Add the sausage, breaking it up, and cook until browned for another 5 minutes.
- Add garlic, thyme, salt, and red pepper, cooking for an additional 30 seconds.
- Transfer to a slow cooker if sautéing in a skillet, then add broth and cream cheese, covering and cooking on low for 4 hours.
- Stir in parmesan cheese until combined.
- Add tortellini, ensuring it is submerged, and cook for an additional hour on low.
- Press spinach into the liquid, cooking for another 10 minutes until wilted.
- Stir in half and half before serving.
