Ingredients

The soup base

  • 1 whole yellow onion
  • 1 lb Italian turkey sausage
  • 4 tbsp butter
  • 2 tbsp minced garlic
  • 2 tbsp all-purpose flour
  • 1 tbsp tomato paste
  • 15 oz fire roasted crushed tomatoes
  • 4 cups chicken stock
  • 1 cup heavy whipping cream
  • 1 tsp Garlic & Wine Seasoning
  • 1 tsp black pepper
  • ½ tsp oregano
  • ½ tsp sea salt
  • ¼ tsp ground thyme
  • ¼ tsp red pepper flakes
  • ¼ tsp basil flakes

The pasta and greens

  • 5 oz organic fresh spinach
  • 10 oz 3-cheese tortellini pasta

Optional garnish

  • to taste grated parmesan cheese

Instructions

  1. Chop the onion and set aside.
  2. Cook the turkey sausage until no longer pink, then remove from heat.
  3. In the same pot, add butter, garlic, and flour, stirring until combined, then add the onions and cook until translucent.
  4. Stir in the tomato paste and crushed tomatoes until well mixed.
  5. Add spinach, chicken stock, heavy whipping cream, and all seasonings, then bring to a boil.
  6. Add the tortellini and cooked turkey to the pot, cover, and cook for 15 minutes until the pasta is tender.
  7. Serve hot, optionally garnished with parmesan cheese.
