Instructions
- Chop the onion and set aside.
- Cook the turkey sausage until no longer pink, then remove from heat.
- In the same pot, add butter, garlic, and flour, stirring until combined, then add the onions and cook until translucent.
- Stir in the tomato paste and crushed tomatoes until well mixed.
- Add spinach, chicken stock, heavy whipping cream, and all seasonings, then bring to a boil.
- Add the tortellini and cooked turkey to the pot, cover, and cook for 15 minutes until the pasta is tender.
- Serve hot, optionally garnished with parmesan cheese.
