Ingredients

The soup base

  • 1 pound ground Italian sausage
  • 1 cup chopped carrots
  • ½ cup chopped celery
  • ½ cup chopped onion
  • 3 cloves garlic, finely minced
  • 1 teaspoon salt
  • ½ teaspoon dried basil
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried thyme
  • ¼ teaspoon black pepper

The broth

  • 16 ounces tomato sauce
  • 4 cups chicken broth

The creamy mixture

  • 2 cups milk
  • cup all-purpose flour

The final ingredients

  • 12 to 14 ounces refrigerated cheese tortellini
  • 2 cups chopped fresh spinach
  • to taste freshly grated Parmesan cheese

Instructions

  1. Cook the sausage, carrots, celery, onion, and garlic in a pot until the sausage is no longer pink and the veggies soften.
  2. Drain excess grease and add salt, basil, oregano, thyme, and pepper.
  3. Stir in tomato sauce and chicken broth, bring to a simmer, and cook for 5-6 minutes.
  4. Blend milk and flour until smooth, then whisk into the soup and bring to a simmer again, cooking for 2-3 minutes until slightly thickened.
  5. Add tortellini and spinach, cooking for another 2-3 minutes until the tortellini is tender.
  6. Serve with freshly grated Parmesan cheese if desired.
