Instructions
- Cook the sausage, carrots, celery, onion, and garlic in a pot until the sausage is no longer pink and the veggies soften.
- Drain excess grease and add salt, basil, oregano, thyme, and pepper.
- Stir in tomato sauce and chicken broth, bring to a simmer, and cook for 5-6 minutes.
- Blend milk and flour until smooth, then whisk into the soup and bring to a simmer again, cooking for 2-3 minutes until slightly thickened.
- Add tortellini and spinach, cooking for another 2-3 minutes until the tortellini is tender.
- Serve with freshly grated Parmesan cheese if desired.
