Sausage and Tortellini Soup

Instructions
- Heat olive oil in a large soup pot and add the sausage, cooking until browned.
- While the sausage cooks, dice the onion and mince the garlic, then add them to the pot and sauté until the onion is soft.
- Peel and slice the carrots, then add them to the pot and sauté for a few more minutes.
- Add the stewed tomatoes with their juices, basil, oregano, and black pepper, breaking up the tomatoes.
- Pour in the vegetable broth and water, cover, and bring to a boil.
- Once boiling, add the tortellini and cook until tender, about 8 minutes.
- Turn off the heat, add the spinach, and stir until wilted. Adjust salt if necessary.
