Italian Sausage & Tortellini Soup

Instructions
- Heat olive oil in a large Dutch oven or stock pot over medium heat.
- Add the ground sausage and cook for 4-5 minutes until browned, breaking it up as it cooks.
- Stir in the minced garlic and spinach, sautéing until the spinach is wilted, about 2 minutes.
- Add the drained cannellini beans, dried oregano, salt, and pepper to the pot.
- Pour in the chicken stock and bring the mixture to a simmer.
- Add the fresh tortellini and reduce the heat to medium, simmering for about 7-8 minutes until the tortellini is cooked.
- Taste and adjust seasoning if necessary, then serve in bowls garnished with Parmesan cheese.
