Instructions
- Brown the Italian sausage in a large stockpot, breaking it up as it cooks, then drain excess grease.
- Return the pot to heat and add olive oil, sauté the onion until soft, then add garlic and cook until fragrant.
- Stir in crushed tomatoes, stock, basil, salt, pepper, and the cooked sausage, then bring to a simmer.
- Add tortellini and spinach, simmer until the tortellini is cooked through, adjusting heat as necessary.
- Serve warm, garnished with Parmesan cheese if desired.
