Ingredients

The soup base

  • 1 pound ground hot Italian sausage
  • 1 tablespoon olive oil
  • 1 cup diced white onion
  • 5 cloves garlic
  • 1 28-ounce can fire-roasted crushed tomatoes
  • 6 cups chicken or vegetable stock
  • ¼ cup fresh basil leaves
  • 1 teaspoon salt
  • ½ teaspoon black pepper

The pasta and greens

  • 1 package tortellini
  • 2 cups fresh baby spinach

For serving

  • to taste freshly-grated Parmesan cheese

Instructions

  1. Brown the Italian sausage in a large stockpot, breaking it up as it cooks, then drain excess grease.
  2. Return the pot to heat and add olive oil, sauté the onion until soft, then add garlic and cook until fragrant.
  3. Stir in crushed tomatoes, stock, basil, salt, pepper, and the cooked sausage, then bring to a simmer.
  4. Add tortellini and spinach, simmer until the tortellini is cooked through, adjusting heat as necessary.
  5. Serve warm, garnished with Parmesan cheese if desired.
