Sausage and Tortellini Tomato Soup

Instructions
- Heat olive oil in a soup pot over medium-high heat and add onions, cooking until softened.
- Stir in minced garlic and cook for another 30-60 seconds.
- Add the sausage and cook until browned and fully broken up.
- Pour in the chicken broth, crushed tomatoes, basil, Italian seasoning, salt, pepper, and red pepper flakes; bring to a boil.
- Reduce heat to low and simmer covered for 20 minutes.
- Uncover and whisk in the cream cheese until dissolved.
- Add tortellini and spinach, stirring to combine, and cover the pot.
- Simmer for an additional 10 minutes until the tortellini is cooked.
