Ingredients

  • 1 teaspoon olive oil
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 1 lb raw hot Italian poultry sausage, casings removed
  • 32 oz fat free low sodium chicken broth
  • 1 28 oz can unseasoned crushed tomatoes
  • 2 tablespoons chopped fresh basil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • a pinch black pepper
  • ½ teaspoon crushed red pepper flakes
  • 3 oz 1/3 less fat cream cheese, cut into cubes
  • 12 oz refrigerated cheese tortellini
  • 2 cups torn fresh spinach

Instructions

  1. Heat olive oil in a soup pot over medium-high heat and add onions, cooking until softened.
  2. Stir in minced garlic and cook for another 30-60 seconds.
  3. Add the sausage and cook until browned and fully broken up.
  4. Pour in the chicken broth, crushed tomatoes, basil, Italian seasoning, salt, pepper, and red pepper flakes; bring to a boil.
  5. Reduce heat to low and simmer covered for 20 minutes.
  6. Uncover and whisk in the cream cheese until dissolved.
  7. Add tortellini and spinach, stirring to combine, and cover the pot.
  8. Simmer for an additional 10 minutes until the tortellini is cooked.
