Smoked Turkey

Ingredients

  • 1 whole turkey (12 lb)
  • 1 recipe turkey brine (optional)
  • 3 cups chicken broth
  • ½ cup BBQ rub
  • 1 whole onion (quartered)
  • 1 whole lemon (quartered)
  • 4 sprigs fresh herbs (thyme, rosemary, parsley)
  • to taste fresh herbs for garnish
  • as needed cooking spray

Instructions

  1. If brining, prepare the brine and soak the turkey for 18-24 hours.
  2. Preheat the smoker to 250°F and load it with apple wood.
  3. Coat a disposable aluminum pan with cooking spray and place the turkey in it, tucking the wings under the body.
  4. Stuff the turkey cavity with onion, lemon, and herbs, then tie the legs together with twine.
  5. Sprinkle BBQ rub all over the turkey's surface.
  6. Place the turkey in the smoker and cook for 5-6 hours, basting with chicken broth every 30-45 minutes until the internal temperature reaches 165°F.
  7. If the turkey darkens too much, cover it with foil.
  8. Let the turkey rest for 10-15 minutes before transferring to a serving plate and garnishing with herbs.
