Instructions
- If brining, prepare the brine and soak the turkey for 18-24 hours.
- Preheat the smoker to 250°F and load it with apple wood.
- Coat a disposable aluminum pan with cooking spray and place the turkey in it, tucking the wings under the body.
- Stuff the turkey cavity with onion, lemon, and herbs, then tie the legs together with twine.
- Sprinkle BBQ rub all over the turkey's surface.
- Place the turkey in the smoker and cook for 5-6 hours, basting with chicken broth every 30-45 minutes until the internal temperature reaches 165°F.
- If the turkey darkens too much, cover it with foil.
- Let the turkey rest for 10-15 minutes before transferring to a serving plate and garnishing with herbs.
