Smoked Turkey Breast

Ingredients

Brine

  • 1 cup apple cider
  • 1 gallon cold water
  • ¾ cup kosher salt
  • ½ cup brown sugar
  • 3 cloves garlic
  • 1 tablespoon peppercorns
  • 1 orange thinly sliced
  • 3 sprigs rosemary

Turkey

  • 6 pounds bone-in turkey breast
  • ¼ cup BBQ rub
  • as needed none cooking spray
  • as needed none fresh herbs for garnish

Instructions

  1. Prepare the brine by combining all brine ingredients in a pot, bringing to a simmer until dissolved, then cooling.
  2. Submerge the turkey breast in the brine and refrigerate for 8-12 hours.
  3. Remove the turkey from the brine, rinse, and pat dry.
  4. Preheat the smoker to 250°F and prepare wood chips.
  5. Coat a pan with cooking spray and place the turkey in it.
  6. Sprinkle BBQ rub over the turkey breast.
  7. Place the pan in the smoker and cook for about 3 hours until the internal temperature reaches 165°F.
  8. Let the turkey rest for 5-10 minutes, garnish with herbs, slice, and serve.
