Ingredients

The Turkey

  • to taste seasoning of choice (Creole, poultry, blackened, or Italian seasoning)

Instructions

  1. Prepare the turkey by removing it from packaging and placing it on a baking sheet.
  2. Brine the turkey breast for around 3-4 hours, then remove excess moisture.
  3. Let the turkey sit in the fridge for at least three hours or overnight to air-dry.
  4. Preheat the smoker to 250℉/120℃ using your choice of wood.
  5. Season the turkey breast with spices and drizzle with oil.
  6. Place the turkey breast directly on the smoker racks.
  7. Cover the smoker and smoke the turkey for about 90 minutes, moving it around for even cooking.
  8. Check the internal temperature, ensuring it reaches 165℉/75℃.
  9. Remove the turkey from the smoker and serve with cranberry sauce and mashed potatoes.
