Ingredients

The Turkey

  • 6 to 8 pound turkey breast (bone-in or boneless)
  • 1 ounce injectable butter marinade (optional)

The Seasoning

  • 1 tablespoon olive oil or butter
  • ¼ teaspoon ground oregano
  • ¼ teaspoon ground thyme
  • ½ teaspoon brown sugar or sweetener
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • to taste salt and pepper

Instructions

  1. Preheat the smoker to 225 degrees.
  2. If using, inject the turkey breast with the marinade.
  3. Drizzle the turkey with olive oil and season it, rubbing the spices into the skin.
  4. Place the turkey breast in the smoker and smoke for 3 hours.
  5. Increase the smoker temperature to 350 degrees and cook until the internal temperature reaches 165 degrees, which may take 1-3 additional hours.
  6. Allow the turkey to rest for 15-20 minutes before slicing.
