Ingredients

Brine

  • 1 cup apple cider or apple juice
  • 1 gallon cold water
  • ¾ cup kosher salt
  • ½ cup light brown sugar
  • 4 cloves garlic
  • 1 tablespoon black peppercorns
  • 1 orange thinly sliced
  • 3 sprigs rosemary

Turkey

  • 6 pounds bone-in turkey breast
  • 3 sprigs rosemary
  • 1 lemon quartered
  • ½ onion cut into wedges
  • ¾ teaspoon salt
  • ¼ cup butter
  • ½ teaspoon pepper
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon garlic powder
  • ½ cup chicken broth
  • fresh herbs optional for garnish

Instructions

  1. Prepare the brine by combining all brine ingredients in a pot and simmering until salt and sugar dissolve.
  2. Cool the brine to room temperature, then submerge the turkey breast and refrigerate for 8-12 hours.
  3. Remove the turkey from the brine, rinse it, and pat dry.
  4. Place the turkey in a disposable aluminum pan and stuff it with lemon, onion, and rosemary.
  5. Mix softened butter with salt, pepper, Italian seasoning, and garlic powder, then rub it all over the turkey.
  6. Pour chicken broth into the pan and preheat the grill to 375°F.
  7. Place the pan on the grill and cook for 90-120 minutes, basting every 30 minutes until the internal temperature reaches 165°F.
  8. Let the turkey rest for 5-10 minutes before slicing and serving.
