Ingredients

The turkey

  • 1 4-6 pound turkey breast, boneless and skin-on

The seasoning

  • 1½ - 2 teaspoons salt
  • 1 teaspoon black pepper, coarsely ground

The herbed butter

  • 4 ounces unsalted butter, softened
  • 2 teaspoons minced garlic
  • 5 leaves fresh sage, minced
  • 3 large sprigs rosemary, minced
  • 2 sprigs thyme, minced
  • 1 teaspoon paprika
  • 1 tablespoon parsley, chopped

The vegetables

  • 1 onion, quartered
  • 1 stick celery
  • 6 cloves garlic, crushed

Instructions

  1. Pat dry the turkey breast and season with salt and pepper, ensuring some salt is under the skin.
  2. Combine the butter, minced garlic, sage, rosemary, thyme, paprika, and parsley to make herbed butter, and refrigerate it to develop flavors.
  3. Loosen the turkey skin carefully and rub the herbed butter generously under the skin. Let it marinate in the fridge for up to 24 hours.
  4. Remove the turkey from the fridge an hour before cooking to bring it to room temperature. Preheat the oven to 400ºF (200ºC) and arrange the onion, celery, and garlic in a baking dish.
  5. Place the turkey breast on top of the vegetables, skin-side up, and roast for 30 minutes.
  6. Reduce the oven temperature to 325ºF (160ºC) and continue roasting until the internal temperature reaches 165ºF (75ºC), about 1 hour.
  7. Let the turkey rest for 15-20 minutes before carving to allow the juices to settle.
