Instructions
- Pat dry the turkey breast and season with salt and pepper, ensuring some salt is under the skin.
- Combine the butter, minced garlic, sage, rosemary, thyme, paprika, and parsley to make herbed butter, and refrigerate it to develop flavors.
- Loosen the turkey skin carefully and rub the herbed butter generously under the skin. Let it marinate in the fridge for up to 24 hours.
- Remove the turkey from the fridge an hour before cooking to bring it to room temperature. Preheat the oven to 400ºF (200ºC) and arrange the onion, celery, and garlic in a baking dish.
- Place the turkey breast on top of the vegetables, skin-side up, and roast for 30 minutes.
- Reduce the oven temperature to 325ºF (160ºC) and continue roasting until the internal temperature reaches 165ºF (75ºC), about 1 hour.
- Let the turkey rest for 15-20 minutes before carving to allow the juices to settle.
