Oven Roasted Turkey Breast

Ingredients

The turkey and vegetables

  • 4-8 cups Roasting Vegetables (carrots, parsnips, beets, cauliflower, potatoes, brussels sprouts)
  • 3-5 lbs Bone-in Turkey breast

The spice paste

  • 2 tablespoons fresh thyme or rosemary, chopped
  • 1 tablespoon lemon zest, finely chopped
  • 2 teaspoons granulated garlic powder
  • 1 teaspoon dried thyme, sage or rosemary
  • 1 teaspoon paprika
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the vegetables into bite-sized pieces, toss them with olive oil, salt, and pepper, and place them in a large roasting pan.
  3. Prepare the turkey breast by patting it dry and optionally flattening it.
  4. In a small bowl, mix the spice paste ingredients, adding enough olive oil to form a thick paste.
  5. Rub the spice paste all over the turkey breast, including under the skin if desired, and nestle it into the vegetables.
  6. Bake uncovered for approximately 20 minutes per pound, or until the turkey reaches 160°F in the thickest part.
  7. Let the turkey rest covered in foil for 10 minutes before slicing.
