Instructions
- Preheat the oven to 375°F.
- Cut the vegetables into bite-sized pieces, toss them with olive oil, salt, and pepper, and place them in a large roasting pan.
- Prepare the turkey breast by patting it dry and optionally flattening it.
- In a small bowl, mix the spice paste ingredients, adding enough olive oil to form a thick paste.
- Rub the spice paste all over the turkey breast, including under the skin if desired, and nestle it into the vegetables.
- Bake uncovered for approximately 20 minutes per pound, or until the turkey reaches 160°F in the thickest part.
- Let the turkey rest covered in foil for 10 minutes before slicing.
