Instructions
- Dry-brine the turkey by mixing kosher salt and baking powder, then sprinkle over the turkey breast and refrigerate uncovered for 12 to 24 hours.
- Remove the turkey from the refrigerator and let it sit at room temperature for 1 hour before roasting.
- Preheat the oven to 425 degrees and prepare a basting mixture of melted butter and olive oil.
- Loosen the skin of the turkey breast and spread softened butter and sage leaves between the skin and breast.
- Place the turkey in a roasting pan, pour water into the bottom, and lower the oven temperature to 325 degrees.
- Roast the turkey for 2 to 3 hours, basting every 30 minutes, until the internal temperature reaches 165 degrees.
- Let the turkey rest for 30 minutes before carving and serving.
