Ingredients

The turkey

  • 1 (6-7 pound) bone-in whole turkey breast

The brine and seasoning

  • ΒΌ cup kosher salt
  • 1 tablespoon baking powder
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 6 fresh sage leaves
  • freshly ground black pepper

For serving

Instructions

  1. Dry-brine the turkey by mixing kosher salt and baking powder, then sprinkle over the turkey breast and refrigerate uncovered for 12 to 24 hours.
  2. Remove the turkey from the refrigerator and let it sit at room temperature for 1 hour before roasting.
  3. Preheat the oven to 425 degrees and prepare a basting mixture of melted butter and olive oil.
  4. Loosen the skin of the turkey breast and spread softened butter and sage leaves between the skin and breast.
  5. Place the turkey in a roasting pan, pour water into the bottom, and lower the oven temperature to 325 degrees.
  6. Roast the turkey for 2 to 3 hours, basting every 30 minutes, until the internal temperature reaches 165 degrees.
  7. Let the turkey rest for 30 minutes before carving and serving.
