Healthy Caesar Salad with Roasted Chickpea Croutons

Ingredients

Roasted Chickpea Croutons

  • 1 15 ounce can garbanzo beans
  • ½ tablespoon avocado oil
  • ½ teaspoon sea salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Caesar Dressing

  • 1 clove garlic
  • 2 filets anchovy
  • 2 teaspoons Dijon mustard
  • cup 2% Greek yogurt
  • 1 tablespoon mayonnaise
  • ¼ cup lemon juice
  • cup parmesan cheese
  • ¼ teaspoon black pepper
  • ¼ teaspoon sea salt

Salad Base

  • 2 hearts romaine
  • 1 large fennel bulb

Instructions

  1. Preheat the oven to 425°F.
  2. Pat the chickpeas dry with a towel and place them in a bowl.
  3. Season the chickpeas with avocado oil, salt, garlic powder, and black pepper, then toss to coat.
  4. Spread the chickpeas on a baking sheet and bake for 30-35 minutes until crispy.
  5. In a food processor, blend garlic and anchovies until broken down.
  6. Add Dijon mustard, Greek yogurt, mayonnaise, lemon juice, parmesan cheese, salt, and pepper, and blend until creamy.
  7. In a large bowl, combine sliced romaine and fennel.
  8. Add ⅓ cup of dressing to the greens and toss to coat.
  9. Top with extra parmesan, black pepper, and the roasted chickpeas before serving.
