Instructions
- Preheat the oven to 425°F.
- Pat the chickpeas dry with a towel and place them in a bowl.
- Season the chickpeas with avocado oil, salt, garlic powder, and black pepper, then toss to coat.
- Spread the chickpeas on a baking sheet and bake for 30-35 minutes until crispy.
- In a food processor, blend garlic and anchovies until broken down.
- Add Dijon mustard, Greek yogurt, mayonnaise, lemon juice, parmesan cheese, salt, and pepper, and blend until creamy.
- In a large bowl, combine sliced romaine and fennel.
- Add ⅓ cup of dressing to the greens and toss to coat.
- Top with extra parmesan, black pepper, and the roasted chickpeas before serving.
