Instructions
- Mix all ingredients for the Salt-Free Creole Seasoning in a small bowl.
- Sprinkle shrimp and chicken with Salt-Free Creole Seasoning and set aside.
- Combine chopped onion, green pepper, and celery in a large bowl.
- Melt butter or ghee in a large pot over medium-high heat.
- Add half of the vegetable mixture to the pot and cook until browned.
- Add bacon and cook until browned and fat renders.
- Add sausage and cook for 3 minutes, stirring occasionally.
- Add chicken thighs and cook for about 5 minutes.
- Add remaining vegetable mixture, garlic, and tomato paste; cook for 2 minutes.
- Stir in rice and toast for 2 minutes.
- Gradually add chicken stock while stirring, then reduce heat to medium-low.
- Add remaining seasoning, bay leaves, tomatoes, salt, Worcestershire sauce, and thyme; cover and simmer for 15 minutes.
- Stir in shrimp and cook until pink and opaque.
- Taste and adjust seasoning as needed, then garnish with parsley.
