Ingredients

Salt-Free Creole Seasoning

  • 1 Tbsp paprika
  • 1 Tbsp onion powder
  • 1 Tbsp garlic powder
  • 1 Tbsp dried oregano
  • ½ Tbsp dried thyme
  • ½ Tbsp freshly ground black pepper
  • 1 tsp cayenne pepper
  • ½ tsp smoked paprika

Jambalaya Ingredients

  • 1 lb shrimp, peeled
  • 12 oz chicken thighs, chopped
  • 5 Tbsp Salt Free Creole Seasoning, divided
  • 2 Tbsp grass-fed butter, ghee, or avocado oil
  • 1 large yellow onion, chopped, divided
  • 1 green bell pepper, chopped, divided
  • 2 stalks celery, chopped, divided
  • 9 oz bacon, diced
  • 10 oz gluten free andouille sausage, sliced
  • 6 large cloves garlic, minced
  • ¼ cup tomato paste
  • cups basmati rice, uncooked
  • 3 cups low sodium chicken stock
  • 3 bay leaves
  • 3 roma tomatoes, diced
  • 1 tsp sea salt
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp fresh thyme leaves
  • parsley for garnish

Instructions

  1. Mix all ingredients for the Salt-Free Creole Seasoning in a small bowl.
  2. Sprinkle shrimp and chicken with Salt-Free Creole Seasoning and set aside.
  3. Combine chopped onion, green pepper, and celery in a large bowl.
  4. Melt butter or ghee in a large pot over medium-high heat.
  5. Add half of the vegetable mixture to the pot and cook until browned.
  6. Add bacon and cook until browned and fat renders.
  7. Add sausage and cook for 3 minutes, stirring occasionally.
  8. Add chicken thighs and cook for about 5 minutes.
  9. Add remaining vegetable mixture, garlic, and tomato paste; cook for 2 minutes.
  10. Stir in rice and toast for 2 minutes.
  11. Gradually add chicken stock while stirring, then reduce heat to medium-low.
  12. Add remaining seasoning, bay leaves, tomatoes, salt, Worcestershire sauce, and thyme; cover and simmer for 15 minutes.
  13. Stir in shrimp and cook until pink and opaque.
  14. Taste and adjust seasoning as needed, then garnish with parsley.
