Curried Chickpeas with Spinach

Ingredients

The base

  • 2 Tbsp olive oil
  • 1 medium yellow onion
  • 2 cloves garlic
  • 1 inch fresh ginger
  • 1 ½ Tbsp curry powder

The vegetables

  • 8 oz spinach (fresh or frozen)

The sauce

  • 1 15 oz can tomato sauce

The protein

  • 2 15 oz cans chickpeas

Instructions

  1. Dice the onion, mince the garlic, and grate the ginger.
  2. Sauté the onion, garlic, and ginger in olive oil over medium heat until softened.
  3. Add the curry powder and sauté for one more minute.
  4. Add about ¼ cup of water and the spinach, sautéing until the spinach wilts.
  5. Drain and rinse the chickpeas, then add them and the tomato sauce to the skillet.
  6. Stir well and heat through before serving.
