Curried Chickpeas with Spinach

Instructions
- Dice the onion, mince the garlic, and grate the ginger.
- Sauté the onion, garlic, and ginger in olive oil over medium heat until softened.
- Add the curry powder and sauté for one more minute.
- Add about ¼ cup of water and the spinach, sautéing until the spinach wilts.
- Drain and rinse the chickpeas, then add them and the tomato sauce to the skillet.
- Stir well and heat through before serving.
