Quick Curried Chickpeas

Ingredients

The base

  • 2 Tbsp olive oil
  • 1 medium yellow onion
  • 2 cloves garlic
  • 2 15oz. cans chickpeas, drained
  • 1 20oz. can tomato sauce
  • 1 cup water
  • 1 Tbsp curry powder

The garnish

  • ½ bunch fresh cilantro

Instructions

  1. 1. Dice the onion and mince the garlic.
  2. 2. Cook the onion and garlic in olive oil over medium heat until softened.
  3. 3. Drain the chickpeas and add them to the pot along with the tomato sauce, water, and curry powder.
  4. 4. Stir the mixture and bring it to a simmer.
  5. 5. Rinse and chop the cilantro leaves, then add them to the pot.
  6. 6. Continue to simmer until the sauce thickens, stirring occasionally.
  7. 7. Serve hot when the sauce is thick enough.
