Pasta with Caramelized Sweet Potatoes and Kale

Ingredients

The pasta

  • 12 ounces uncooked pasta

The vegetables

  • 1 pound sweet potatoes
  • ½ medium red onion
  • 5 cloves garlic
  • 2 cups kale leaves

The fats and seasonings

  • 4 tablespoons butter or olive oil
  • to taste Kosher salt
  • to taste black pepper

The liquids

  • ¼ cup dry white wine or stock
  • 2 tablespoons white balsamic vinegar or traditional balsamic vinegar

The toppings

  • ½ cup toasted pine nuts
  • to taste freshly-grated parmesan
  • to taste chopped fresh basil (optional)
  • to taste diced cooked bacon (optional)

Instructions

  1. Cook the pasta according to package directions until al dente, then drain and set aside.
  2. In a large sauté pan, melt 2 tablespoons of butter or olive oil over medium-high heat, add sweet potatoes, and season with salt and pepper. Sauté until tender and caramelized.
  3. Transfer the sweet potatoes to a plate and set aside.
  4. In the same pan, add the remaining butter or olive oil, onion, and garlic, and sauté for 2 minutes.
  5. Add kale, white wine, and balsamic vinegar to the pan, and sauté for an additional 3 minutes.
  6. Combine the cooked pasta, sweet potatoes, kale mixture, and pine nuts in the pot, and toss to combine.
  7. Serve warm, garnished with parmesan and any other desired toppings.
