Pasta with Caramelized Sweet Potatoes and Kale

Instructions
- Cook the pasta according to package directions until al dente, then drain and set aside.
- In a large sauté pan, melt 2 tablespoons of butter or olive oil over medium-high heat, add sweet potatoes, and season with salt and pepper. Sauté until tender and caramelized.
- Transfer the sweet potatoes to a plate and set aside.
- In the same pan, add the remaining butter or olive oil, onion, and garlic, and sauté for 2 minutes.
- Add kale, white wine, and balsamic vinegar to the pan, and sauté for an additional 3 minutes.
- Combine the cooked pasta, sweet potatoes, kale mixture, and pine nuts in the pot, and toss to combine.
- Serve warm, garnished with parmesan and any other desired toppings.
