Ingredients

The base

  • 1 cup uncooked long grain brown rice

The vegetables

  • 1 small onion, chopped
  • 1 medium sweet potato, peeled and diced
  • 2 cups chopped kale, stems removed

The seasonings

  • ½ tsp salt
  • ½ tsp black pepper
  • tsp ground cumin
  • tsp ground turmeric
  • tsp ground nutmeg

The cooking ingredients

  • 1-2 tbsp extra-virgin olive oil
  • 2 tbsp water

Instructions

  1. Cook the rice according to the package instructions.
  2. In a sauté pan over medium heat, heat olive oil and add onion, sweet potatoes, salt, and pepper; sauté for 3-5 minutes until caramelized.
  3. Add water, cover, and cook until sweet potatoes are tender.
  4. Stir in the kale and cook until softened, about 1 minute.
  5. Remove from heat, add the cooked rice and spices, and toss until combined.
  6. Serve immediately.
