Instructions

  2. Mix the mashed sweet potato with butter, salt, and pepper to create the filling.
  3. In a food processor, combine flour and eggs to form a dough.
  4. Let the dough rest for 20 to 30 minutes wrapped in plastic.
  5. Roll out the dough using a pasta maker, ensuring it's not too thin.
  6. Cut the dough and add dollops of filling, sealing with water.
  7. Boil the ravioli for about 4 minutes.
  8. Prepare the sauce by browning butter with sage leaves and pour it over the cooked ravioli.
