Ravioli with Sage Brown Butter Sauce

Ingredients

  • 9 oz. ravioli
  • 1 clove garlic, minced
  • ¼ cup walnuts, chopped
  • 4 Tbsp butter
  • ½ tsp dried sage
  • ¼ lb. fresh spinach
  • to taste salt and pepper
  • 1 Tbsp grated Parmesan

Instructions

  1. 1. Boil water in a pot for the ravioli and cook according to package instructions.
  2. 2. Reserve ¼ cup of the cooking water, then drain the ravioli.
  3. 3. While the ravioli cooks, mince the garlic and chop the walnuts.
  4. 4. Melt butter in a skillet over medium-low heat, stirring continuously until foamy.
  5. 5. Add minced garlic and chopped walnuts to the skillet and cook until golden brown.
  6. 6. Remove from heat and stir in dried sage.
  7. 7. Add spinach and reserved cooking water to the skillet, return to low heat, and stir until spinach wilts.
  8. 8. Toss the cooked ravioli in the skillet with the sauce to coat.
  9. 9. Serve with grated Parmesan and freshly cracked pepper on top.
