Ingredients

  • 6 slices bacon
  • ½ cup chopped onions
  • 1 cup chopped carrots
  • 2 lbs red potatoes, peeled and chopped
  • 3 ears corn, kernels removed
  • 6 cups chicken broth
  • 1 tsp smoked paprika
  • to taste salt
  • to taste pepper

Instructions

  1. Cook the bacon until crispy, then chop it into small pieces.
  2. Add the bacon to a slow cooker.
  3. Place all remaining ingredients in the slow cooker and stir well.
  4. Cook on low for about 8 hours until the vegetables are tender.
  5. Use an immersion blender to puree the chowder, leaving some chunks.
  6. Season with additional salt and pepper as needed, and serve warm.
