Corn Chowder

Ingredients

  • 12 ounces bacon, chopped
  • 2 large onions, chopped
  • 2 tablespoons butter
  • ¼ cup all-purpose flour
  • ¼ teaspoon ground turmeric
  • 6 cups chicken broth
  • 1 pound thin-skinned potatoes, unpeeled and diced
  • 1 teaspoon salt
  • 2 pounds frozen corn
  • 1 cup half-and-half
  • 6 ounces sharp cheddar cheese, grated
  • to taste freshly ground black pepper
  • to taste chopped fresh chives (optional)

Instructions

  1. Cook the bacon in a large pot until crisp, then remove and reserve.
  2. Add onions and butter to the pot and cook until softened.
  3. Stir in flour and turmeric, cooking for a minute.
  4. Add chicken broth, potatoes, and salt, bringing to a boil before reducing heat and simmering until potatoes are tender.
  5. Stir in corn, half-and-half, cheese, and bacon, cooking until heated through and cheese is melted.
  6. Season with salt and pepper to taste, and garnish with chives if desired.
