Ingredients

The cake

  • ½ cup neutral oil
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ teaspoon vanilla extract
  • ½ cup canned crushed pineapple
  • 1 cup freshly grated carrot
  • 1 cup all-purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ cup raisins

The frosting

  • ¾ cup chopped caramel candies or salted caramel sauce
  • 8 ounces cream cheese
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease an 8-inch square pan.
  2. In a bowl, mix the oil and sugar, then add the eggs, vanilla, pineapple, and carrots.
  3. In another bowl, combine the flour, baking powder, baking soda, cinnamon, and salt, then add to the wet ingredients and mix until just combined.
  4. Fold in the raisins if using, pour the batter into the prepared pan, and bake for 33-36 minutes until golden brown.
  5. Let the cake cool completely before making the frosting.
  6. Melt the caramel candies with a splash of water if using, or stir the salted caramel sauce.
  7. Beat the cream cheese and powdered sugar until fluffy, then mix in the melted caramel or salted caramel sauce and vanilla until smooth.
  8. Frost the cooled cake and optionally drizzle extra caramel sauce on top before serving.
