Easy Carrot Cake

The frosting

Instructions
- Preheat the oven to 350°F and grease an 8-inch square pan.
- In a bowl, mix the oil and sugar, then add the eggs, vanilla, pineapple, and carrots.
- In another bowl, combine the flour, baking powder, baking soda, cinnamon, and salt, then add to the wet ingredients and mix until just combined.
- Fold in the raisins if using, pour the batter into the prepared pan, and bake for 33-36 minutes until golden brown.
- Let the cake cool completely before making the frosting.
- Melt the caramel candies with a splash of water if using, or stir the salted caramel sauce.
- Beat the cream cheese and powdered sugar until fluffy, then mix in the melted caramel or salted caramel sauce and vanilla until smooth.
- Frost the cooled cake and optionally drizzle extra caramel sauce on top before serving.
