Instructions
- Preheat the oven to 325°F and grease a 9x13-inch baking dish.
- In a medium bowl, whisk together flour, baking powder, cinnamon, allspice, and salt.
- In a large bowl, whisk the eggs until lightly beaten, then add sugar and vegetable oil, mixing well.
- Stir in the flour mixture until just combined, then fold in the grated carrots.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 50 minutes to 1 hour, until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely in the pan.
- For the frosting, beat cream cheese, butter, and vanilla until smooth, then gradually add sifted powdered sugar until creamy.
- Spread the frosting over the cooled cake and chill before serving if desired.
