Ingredients

The kale

  • 8 ounces chopped kale

The aromatics

  • 1 cup diced sweet yellow onion
  • 2 cloves garlic

The liquids

  • 1 tablespoon canola oil
  • cups vegetable broth
  • 1 medium lemon

The seasonings

  • ½ teaspoon kosher salt
  • teaspoon black pepper
  • ¼ teaspoon red pepper flakes

Instructions

  1. Select 'sauté' on the Instant Pot and heat oil.
  2. Add diced onion and salt, cooking until softened and golden.
  3. Stir in garlic and cook until aromatic, deglazing with vegetable broth if necessary.
  4. Add chopped kale, vegetable broth, and black pepper, then close the lid and seal the vent.
  5. Cook on high pressure for 3 minutes for kale with a bite, or 9 minutes for tender stewed kale.
  6. Release pressure carefully and add lemon juice and zest before serving.
