Instructions
- Select 'sauté' on the Instant Pot and heat oil.
- Add diced onion and salt, cooking until softened and golden.
- Stir in garlic and cook until aromatic, deglazing with vegetable broth if necessary.
- Add chopped kale, vegetable broth, and black pepper, then close the lid and seal the vent.
- Cook on high pressure for 3 minutes for kale with a bite, or 9 minutes for tender stewed kale.
- Release pressure carefully and add lemon juice and zest before serving.
