Ingredients

  • 2 tablespoons olive oil
  • ¼ cup onion, finely diced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • teaspoon crushed red pepper flakes
  • 6 cups kale leaves, stems removed, cut or torn into 1 inch pieces
  • ¼ cup chicken broth (or vegetable broth or water)
  • teaspoons minced garlic
  • 2 tablespoons chopped fresh herbs (such as parsley or dill)

Instructions

  1. Heat olive oil in a pan over medium-high heat.
  2. Add onion and cook until softened.
  3. Stir in salt, black pepper, and red pepper flakes.
  4. Add kale and chicken broth to the pan.
  5. Cook until the kale is tender and most of the liquid has evaporated.
  6. Add garlic and cook for an additional minute, stirring constantly.
  7. Garnish with fresh herbs and serve.
