Pasta with Cauliflower

Ingredients

The pasta

  • 12 oz spaghetti

The vegetables

  • 1 large head cauliflower
  • 1 medium onion
  • ½ cup chopped parsley

The seasoning and toppings

  • 3 ½ tsp extra virgin olive oil
  • cup Italian seasoned bread crumbs
  • 5 anchovies
  • 6 tbsp Pecorino Romano cheese

Instructions

  1. Boil pasta in salted water until al dente and reserve 1 cup of pasta water.
  2. Steam or boil the cauliflower until tender and set aside.
  3. Toast the breadcrumbs in a small frying pan with ½ teaspoon of olive oil and set aside.
  4. In a large frying pan, sauté anchovies in the remaining olive oil until they dissolve.
  5. Add the chopped onions and cook until golden.
  6. Mix in the steamed cauliflower.
  7. Toss the pasta with parsley, cheese, cauliflower, and reserved pasta water, adjusting consistency as needed.
  8. Season with salt and pepper to taste.
  9. Divide the pasta among plates, top with toasted breadcrumbs, and serve.
