Ingredients

Dry Ingredients

  • cups Bob's Red Mill Chickpea and Fava Bean Flour
  • 3 tbsp nutritional yeast
  • 1 tsp sea salt
  • ½ tsp black salt (optional)
  • ½ tsp black pepper
  • 1 tsp baking powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp dried basil

Wet Ingredients

  • cups water or oat milk
  • 1 tbsp olive oil
  • ½ cup vegan cheddar (shredded)
  • ½ cup red bell pepper (finely chopped)
  • ½ cup jalapeno pepper (finely chopped)
  • ½ cup fresh tomato (finely chopped)
  • ½ cup fresh spinach (finely chopped)
  • ½ cup fresh corn
  • ¼ cup green onion (finely chopped)
  • 1 clove garlic (grated)

Garnish

  • to taste black salt
  • to taste hot sauce
  • to taste fresh chopped avocado

Instructions

  1. Preheat the oven to 375°F and prepare a muffin tin.
  2. In a large mixing bowl, combine all the dry ingredients and mix well.
  3. Add the water to the dry mixture and stir until a pancake-batter-like consistency is achieved, adding more water if necessary.
  4. Stir in the remaining ingredients until well combined, but do not overmix.
  5. Using a ¼ cup measure, fill each muffin tin with the mixture.
  6. Bake for around 30 minutes, then remove from the oven and let cool for 10 minutes before taking them out of the tins.
  7. Serve with black salt, hot sauce, and fresh avocado if desired.
