Ingredients

  • 1 cup Chickpea Flour
  • ½ cup GF Flour
  • 1 oz freeze dried fruit
  • ¼ cup GF muesli
  • 30 grams Vanilla Protein
  • 1 piece egg
  • ½ cup water
  • 1 dash milk
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp almond extract
  • 1 optional sweetener of choice (honey, stevia, etc)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine all dry ingredients in a bowl and mix well.
  3. Add the egg, water, milk, and remaining ingredients to the dry mix.
  4. Beat the mixture until smooth, leaving the dried fruit mix intact.
  5. Coat a muffin pan with cooking spray or oil.
  6. Scoop the batter into each muffin cup.
  7. Bake for 15 minutes or until the center of the muffins is fully cooked.
