Super Moist Flourless Zucchini Muffins

Ingredients

  • ¾ cup creamy almond butter
  • 1 cup grated zucchini
  • 2 large eggs
  • cup pure maple syrup
  • 1 tsp vanilla extract
  • ¾ tsp baking soda
  • 1 ½ tsp cinnamon
  • ¼ tsp fine sea salt
  • cup chocolate chips

Instructions

  1. Preheat the oven to 350ºF and grease a muffin tin or line it with paper liners.
  2. In a large mixing bowl, whisk together all ingredients except for the chocolate chips.
  3. Fold in the chocolate chips.
  4. Divide the batter evenly into the muffin tin, filling each cup to the top.
  5. Bake for 21-23 minutes, or until a knife comes out clean.
  6. Allow the muffins to cool for at least 20 minutes before removing them from the pan and cooling on a wire rack.
