Super Moist Flourless Zucchini Muffins

Instructions
- Preheat the oven to 350ºF and grease a muffin tin or line it with paper liners.
- In a large mixing bowl, whisk together all ingredients except for the chocolate chips.
- Fold in the chocolate chips.
- Divide the batter evenly into the muffin tin, filling each cup to the top.
- Bake for 21-23 minutes, or until a knife comes out clean.
- Allow the muffins to cool for at least 20 minutes before removing them from the pan and cooling on a wire rack.
