Butternut Squash Apple Soup

Ingredients

  • 2 tablespoons olive oil
  • ½ cup diced onion
  • 6 cups butternut squash, peeled, seeded and diced into 1 inch cubes
  • 1 cup apple, peeled, cored, and sliced
  • 1 teaspoon ground cinnamon
  • ½ teaspoon celtic sea salt
  • ¼ teaspoon ground black pepper
  • 4 cups water or chicken stock

Instructions

  1. Heat olive oil in a large pot.
  2. Sauté diced onion until golden brown, about 10-15 minutes.
  3. Add butternut squash, apple, cinnamon, salt, and pepper; cook for 10 minutes.
  4. Pour in water or chicken stock and bring to a boil.
  5. Reduce heat and simmer for 30 minutes.
  6. Puree the soup in small batches using a Vitamix for safety.
  7. Serve warm.
