Butternut Squash Apple Soup

water or chicken stock
Instructions
- Heat olive oil in a large pot.
- Sauté diced onion until golden brown, about 10-15 minutes.
- Add butternut squash, apple, cinnamon, salt, and pepper; cook for 10 minutes.
- Pour in water or chicken stock and bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Puree the soup in small batches using a Vitamix for safety.
- Serve warm.
