Instructions
- Preheat the oven to 375°F.
- In a large bowl or baking dish, combine the quinoa, 1 ½ cups of cheese, chicken, black beans, corn, and BBQ sauce.
- Transfer the mixture to a baking dish and sprinkle the remaining ½ cup of cheese on top.
- Bake for 15-20 minutes until the cheese is melted and the casserole is warmed through.
- Drizzle additional BBQ sauce on top and add optional garnishes before serving.
