Ingredients

The casserole

  • 3 cups cooked quinoa
  • 2 cups shredded Colby Jack cheese
  • 2 cups shredded cooked chicken
  • 1 15-ounce can black beans
  • 1 cup whole-kernel corn
  • 1 ¼ cups KC Masterpiece Kansas City Classic BBQ Sauce

Optional garnishes

  • to taste chopped fresh cilantro
  • to taste finely-chopped red or green onions
  • to taste diced avocado
  • to taste sour cream

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl or baking dish, combine the quinoa, 1 ½ cups of cheese, chicken, black beans, corn, and BBQ sauce.
  3. Transfer the mixture to a baking dish and sprinkle the remaining ½ cup of cheese on top.
  4. Bake for 15-20 minutes until the cheese is melted and the casserole is warmed through.
  5. Drizzle additional BBQ sauce on top and add optional garnishes before serving.
