BBQ Ranch Chicken Casserole

Ingredients

  • 16 ounces frozen broccoli
  • 16 ounces cooked shredded chicken
  • 4 cups cooked rice or quinoa
  • 8 ounces shredded cheddar cheese
  • 1 each red onion, chopped
  • 1 each tomato, chopped
  • 1 cup barbecue sauce
  • ½ cup sour cream or Greek yogurt
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon sea salt

Instructions

  1. Preheat the oven to 350°F.
  2. Spray a casserole dish with cooking spray.
  3. In a large bowl, combine broccoli, chicken, quinoa or rice, half of the cheese, red onion, and tomato.
  4. In a separate bowl, whisk together barbecue sauce, Greek yogurt or sour cream, chili powder, onion powder, and salt.
  5. Toss the sauce mixture with the chicken and broccoli mixture.
  6. Transfer the mixture to the prepared casserole dish and top with the remaining cheese.
  7. Bake for 30 minutes and serve warm.
