Instructions
- Preheat the oven to 350°F (175°C) and prepare a large baking dish.
- Melt the butter in a saucepan over medium heat, then whisk in the flour and cook for 2 minutes.
- Gradually add the milk and bring to a simmer, stirring constantly until thickened.
- Reduce heat and stir in 4 ounces of cheddar cheese, goat cheese, garlic powder, cayenne pepper, salt, and pepper until melted.
- Remove from heat and mix in the chicken, quinoa, and broccoli, then transfer to the baking dish.
- Top with remaining cheese and breadcrumbs, then bake for 30 minutes until bubbly.
- Let sit for 10 minutes before serving.
