Ingredients

The base

  • 6 tablespoons butter
  • 6 tablespoons flour
  • 2 ½ cups milk
  • 16 ounces cooked chicken
  • 3 cups cooked quinoa
  • 10 ounces frozen broccoli

The cheese

  • 6 ounces shredded cheddar cheese
  • 3 ounces seasoned goat cheese

The seasonings

  • 1 teaspoon garlic powder
  • ⅛ - ¼ teaspoon cayenne pepper
  • 1 teaspoon sea salt
  • ½ teaspoon fresh ground black pepper

The topping

  • ½ cup gluten free breadcrumbs

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a large baking dish.
  2. Melt the butter in a saucepan over medium heat, then whisk in the flour and cook for 2 minutes.
  3. Gradually add the milk and bring to a simmer, stirring constantly until thickened.
  4. Reduce heat and stir in 4 ounces of cheddar cheese, goat cheese, garlic powder, cayenne pepper, salt, and pepper until melted.
  5. Remove from heat and mix in the chicken, quinoa, and broccoli, then transfer to the baking dish.
  6. Top with remaining cheese and breadcrumbs, then bake for 30 minutes until bubbly.
  7. Let sit for 10 minutes before serving.
