Instructions
- Preheat the oven to 400°F and prepare a baking sheet.
- Cook the quinoa in boiling vegetable broth or water until liquid is absorbed, then steam for 10 minutes.
- Prepare the broccoli by tossing it with olive oil, salt, and roasting it for about 20 minutes.
- Make the breadcrumbs by processing the bread and sautéing it with garlic in melted butter until browned.
- Reduce the oven temperature to 350°F, mix the cooked quinoa with seasonings and cheese, then combine with the roasted broccoli.
- Transfer to a baking dish, top with reserved cheese and breadcrumbs, and bake for 25 minutes until golden.
