Ingredients

The casserole

  • 2 cups vegetable broth or water
  • 1 cup quinoa
  • 16 ounces broccoli florets
  • 2 tablespoons olive oil
  • ¾ teaspoon salt
  • 10 twists freshly ground black pepper
  • ¼ teaspoon red pepper flakes
  • 8 ounces freshly grated cheddar cheese
  • 1 cup low-fat milk

The topping

  • ½ tablespoon butter
  • 1 clove garlic
  • 1 slice whole wheat bread

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet.
  2. Cook the quinoa in boiling vegetable broth or water until liquid is absorbed, then steam for 10 minutes.
  3. Prepare the broccoli by tossing it with olive oil, salt, and roasting it for about 20 minutes.
  4. Make the breadcrumbs by processing the bread and sautéing it with garlic in melted butter until browned.
  5. Reduce the oven temperature to 350°F, mix the cooked quinoa with seasonings and cheese, then combine with the roasted broccoli.
  6. Transfer to a baking dish, top with reserved cheese and breadcrumbs, and bake for 25 minutes until golden.
