Ingredients

The blend

  • cups cashew milk
  • ¾ cup coconut milk
  • ¾ tsp sea salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp chia seed meal
  • 1 cup fresh spinach

The casserole

  • 3 cups cooked quinoa
  • 4 cups raw broccoli
  • 1 cup raw corn or sauteed onions and celery

Instructions

  1. Blend the cashew milk, coconut milk, sea salt, garlic powder, onion powder, chia seed meal, and fresh spinach until smooth.
  2. In a large bowl, combine the blended mixture with cooked quinoa, raw broccoli, and raw corn or the sauteed onions and celery.
  3. Pour the mixture into a large rectangular baking dish.
  4. Bake in the oven at 350 degrees Fahrenheit for 40 minutes.
