Cheesy Broccoli & Quinoa Casserole

Instructions
- Preheat the oven to 350°F.
- In a saucepan, bring quinoa and water to a boil, then cover and reduce heat to low for 15 minutes until tender.
- Saute the chopped onion in coconut oil until tender, about 5 minutes.
- Add broccoli florets and a splash of water, cover, and steam for about 10 minutes until fork-tender.
- Blend all cheese sauce ingredients until smooth and creamy.
- Combine cooked quinoa with the sautéed onion and broccoli, pour over the cheese sauce, and stir to mix.
- Smooth the top and bake for 30 minutes until bubbly hot.
