Cheesy Quinoa Casserole

Ingredients

  • 3 cups cooked quinoa
  • 1 cup tomato/pasta sauce
  • cup unsweetened almond milk
  • ¾ cup shredded vegan mozzarella cheese
  • 2 medium tomatoes, diced
  • to taste shredded basil or parsley or other herb for topping

Instructions

  1. Preheat the oven to 350°F and grease an 8x8 baking dish.
  2. In a pan over medium-high heat, heat the almond milk and ¼ cup of cheese until melted.
  3. Add the cooked quinoa, tomato/pasta sauce, and half of the diced tomatoes, stirring until combined and creamy.
  4. Transfer the quinoa mixture to the baking dish and spread evenly.
  5. Sprinkle the remaining cheese and diced tomatoes on top.
  6. Bake for 15 minutes, then broil for 1 minute until the cheese is bubbly.
  7. Remove from the oven and let cool for 5 minutes before topping with herbs and serving.
