Cheesy Quinoa Casserole

shredded basil or parsley or other herb for topping
Instructions
- Preheat the oven to 350°F and grease an 8x8 baking dish.
- In a pan over medium-high heat, heat the almond milk and ¼ cup of cheese until melted.
- Add the cooked quinoa, tomato/pasta sauce, and half of the diced tomatoes, stirring until combined and creamy.
- Transfer the quinoa mixture to the baking dish and spread evenly.
- Sprinkle the remaining cheese and diced tomatoes on top.
- Bake for 15 minutes, then broil for 1 minute until the cheese is bubbly.
- Remove from the oven and let cool for 5 minutes before topping with herbs and serving.
