Ingredients

The casserole

  • 3 cups cooked quinoa
  • 16 ounces non-fat plain Greek yogurt or vegan sour cream
  • ¼ cup milk of choice
  • 2 cups shredded cheddar or Daiya shreds
  • 1 cup onion, chopped fine
  • 4 ounces chopped green chiles
  • 1 whole jalapeno pepper, seeded and diced
  • 1 teaspoon ground cumin
  • ½ teaspoon sea salt
  • ¼ teaspoon fresh ground black pepper

For baking

  • as needed spray olive oil spray

Instructions

  1. 1. Preheat the oven to 350 degrees.
  2. 2. Spray an 8-inch baking dish with olive oil spray.
  3. 3. In a large bowl, combine yogurt and milk.
  4. 4. Add quinoa, 1 ½ cups of cheese, onion, green chiles, jalapeno, cumin, sea salt, and black pepper to the mixture.
  5. 5. Top with the remaining ½ cup of cheese.
  6. 6. Bake for 30 minutes.
  7. 7. If frozen, thaw in the refrigerator and bake for 30 to 40 minutes until heated through.
