Cheesy Green Chile Quinoa Casserole

Instructions
- 1. Preheat the oven to 350 degrees.
- 2. Spray an 8-inch baking dish with olive oil spray.
- 3. In a large bowl, combine yogurt and milk.
- 4. Add quinoa, 1 ½ cups of cheese, onion, green chiles, jalapeno, cumin, sea salt, and black pepper to the mixture.
- 5. Top with the remaining ½ cup of cheese.
- 6. Bake for 30 minutes.
- 7. If frozen, thaw in the refrigerator and bake for 30 to 40 minutes until heated through.
