Broccoli and Cheese Casserole

Ingredients

  • 4 cups broccoli florets
  • 3 ½ cups cooked rice
  • ½ cup onion, diced
  • ¼ cup butter
  • ¼ cup flour
  • 2 cups milk
  • 3 cups shredded cheddar cheese
  • 2 ounces cream cheese
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • 1 cup crushed buttery cracker crumbs
  • 2 tablespoons chopped parsley
  • to taste cooking spray

Instructions

  1. Preheat the oven to 375°F and coat a 9x13 pan with cooking spray.
  2. Melt butter in a pot over medium heat, add onion, and cook until translucent.
  3. Stir in flour and cook for 1 minute.
  4. Whisk in milk and cook until the sauce thickens.
  5. Add cream cheese, 2 cups of cheddar cheese, salt, pepper, smoked paprika, and garlic powder to the sauce and stir until smooth.
  6. In a bowl, combine broccoli and rice, then pour the sauce over and mix well.
  7. Transfer the mixture to the prepared pan, smooth the top, and sprinkle with remaining cheese and crushed crackers.
  8. Bake for 20-30 minutes until bubbly and cheese is melted, then sprinkle with parsley before serving.
