Instructions
- Preheat the oven to 375°F and coat a 9x13 pan with cooking spray.
- Melt butter in a pot over medium heat, add onion, and cook until translucent.
- Stir in flour and cook for 1 minute.
- Whisk in milk and cook until the sauce thickens.
- Add cream cheese, 2 cups of cheddar cheese, salt, pepper, smoked paprika, and garlic powder to the sauce and stir until smooth.
- In a bowl, combine broccoli and rice, then pour the sauce over and mix well.
- Transfer the mixture to the prepared pan, smooth the top, and sprinkle with remaining cheese and crushed crackers.
- Bake for 20-30 minutes until bubbly and cheese is melted, then sprinkle with parsley before serving.
