Broccoli and Cheese Casserole

Instructions
- Preheat the oven to 350°F.
- Cook 1-1/3 cups of uncooked rice according to package instructions to yield 4 cups of cooked rice and set aside.
- In a pot over medium heat, melt butter and sauté minced garlic, then add chopped onion and broccoli, seasoning with sea salt, and cook covered for 15 minutes.
- In a large bowl, combine the cooked rice, broccoli mixture, and all remaining ingredients except for 1 cup of shredded cheese. Mix well.
- Transfer the mixture to a large casserole dish and top with the remaining cheese.
- Bake the casserole for 30 minutes and serve hot.
