Cheesy Broccoli Chicken and Rice Casserole

Instructions
- Preheat the oven to 350°F and grease a 9x13-inch baking pan.
- In a skillet, melt the butter and sauté the carrots, onion, and garlic until softened.
- Add flour to the skillet and cook for a couple of minutes, then whisk in the chicken broth and simmer until thickened.
- Stir in cream cheese, salt, thyme, and pepper, whisking until mostly smooth.
- Add cheddar cheese off the heat and mix until combined.
- Steam the broccoli in the microwave or on the stovetop until tender.
- Combine the cheese sauce with broccoli, chicken, and rice, then spread in the prepared baking dish.
- Mix crushed crackers with melted butter and sprinkle over the casserole.
- Bake for 20 to 30 minutes until hot and bubbling, serving immediately.
