Ingredients

The sauce

  • 6 tablespoons butter
  • 1 cup diced carrots
  • ½ cup diced onion
  • 3 cloves garlic, finely minced
  • cup all-purpose flour
  • 2 cups chicken broth
  • 4 ounces cream cheese, cut into cubes and softened
  • ½ teaspoon salt
  • a pinch dried thyme
  • a pinch black pepper
  • 2 cups shredded cheddar cheese

The casserole

  • 3 cups broccoli florets, chopped small
  • 3 cups cooked, chopped chicken
  • 2 cups cooked white or brown rice

The topping

  • 1 ½ cups coarsely crushed Ritz crackers
  • 2 tablespoons butter, melted

Instructions

  1. Preheat the oven to 350°F and grease a 9x13-inch baking pan.
  2. In a skillet, melt the butter and sauté the carrots, onion, and garlic until softened.
  3. Add flour to the skillet and cook for a couple of minutes, then whisk in the chicken broth and simmer until thickened.
  4. Stir in cream cheese, salt, thyme, and pepper, whisking until mostly smooth.
  5. Add cheddar cheese off the heat and mix until combined.
  6. Steam the broccoli in the microwave or on the stovetop until tender.
  7. Combine the cheese sauce with broccoli, chicken, and rice, then spread in the prepared baking dish.
  8. Mix crushed crackers with melted butter and sprinkle over the casserole.
  9. Bake for 20 to 30 minutes until hot and bubbling, serving immediately.
