Cheesy Chicken, Broccoli and Rice Casserole

Instructions
- Preheat the oven to 350°F and prepare a 9x13 baking dish with cooking spray.
- Melt the light butter in a saucepan over medium-low heat, then add flour gradually and stir to combine.
- Add milk slowly while whisking until smooth, then stir in salt and pepper.
- Increase heat to medium and add both types of cheddar cheese, whisking until the sauce is smooth and thick.
- In the prepared baking dish, combine rice, chicken, and broccoli, then pour the cheese sauce over and mix well.
- In a dry skillet, toast the bread crumbs over medium heat until golden, then sprinkle over the casserole.
- Bake for 30-35 minutes until hot and bubbly.
